Olive oil and health

The extra virgin olive oil: a valuable and essential food on every table.

The extra virgin olive oil is a key food of the Mediterranean diet, which is widely recognized as a healthy diet and, since November 2010, recognized as a WORLD HERITAGE.
Thanks to the studies and the continuous medical researches, the extra virgin olive oil's health and nutritional properties have been confirmed, increasing its consumption worldwide. It is indeed an important food, which is characterized by the high content of unsaturated fatty acids and antioxidants such as polyphenols, vitamins and carotene. Recently, its effectiveness in weight control, in the regulation of oxidative processes and in the prevention of atherosclerosis, has been confirmed. It's particularly suitable for the nutrition of children, athletes and elderly people, due to its high digestibility and its antioxidant properties, which fight free radicals. Olive oil also facilitates the absorption of salts and vitamins.

Dieticians particularly recommend the use of the extra virgin olive oil to make food more appetizing and to improve the health of consumers.
The addition of the extra virgin olive oil in a Mediterranean-type diet increases antioxidants and positively affects the body's weight. These properties are particularly relevant in the prevention of cardiovascular diseases, especially for those at high risk. The extra virgin olive oil is effective in the control of gene expression, particularly in the reduction of the expression of proteins involved in inflammatory and atherothrombotic processes, whose regulation plays a key role in cardiovascular protection.
